AGED MEZCALS
A rested mezcal can be created from different magueys, which add different flavors, but the key is also its fermentation time, which is usually done using wooden vats. The rested mezcal is introduced into wooden barrels such as white oak or oak, leaving it to rest for a period of 2 months, although some take up to 12 months.
This mezcal gets its own flavor from the barrel, it is smooth and with woody touches. To the characteristic smell of the smoked maguey, other elements are sometimes added such as fruits or herbs that give it other flavors.
